Meet our first Geisha offering from Claudia Samboni’s farm, Las Nubes. What is Geisha? It’s a varietal known for its distinct sweet flavor and floral aroma. Another unique quality of Geisha is that it requires a certain altitude and temperature to thrive. This makes it quite rare to find as it also yields much lower quantities in comparison to the varietals found in our blends and single-origins.

Processing starts with floating the cherries for 24 hours. Then they are pulped and left to ferment for 62 to 64 hours in dry fermentation tanks. Once complete, they are washed well to remove the excess of mucilage and dried in direct sunlight for 3 to 4 days. At last, they are moved to the canopies for 22 to 23 days.
